Ingredients
- 1 tbsp Roberts Soybean Cooking Oil
- 1 small pumpkin about 2lbs
- 1 onion, finely chopped
- 4 cups vegetable stock or water 60g ginger, finely chopped
- ½ tsp curry powder
- ½ tsp ground cumin
- ½ tsp salt
- Sugar to taste
Ingredients
- Clean the pumpkin, remove the seeds and peel if necessary.
- Cut into small cubes.
- Heat the Roberts Soybean Cooking Oil and cook the onion for a few minutes on medium heat. Add Pumpkin, ginger and spices. Sauté for a further 2 minutes.
- Add salt, water and sugar.
- Bring everything to a boil and let cook gently for about 20 – 25 minutes or until the pumpkin pieces are soft.
- Purée the soup.
